It's What's Inside that Counts

This is the large storage tote that is sitting on my table:And this is what's inside:My gosh, they look daunting all piled up together. I have no clue what I'm going to do with them. It's supposed to freeze here tonight, so I had to pick them today but I had no clue there were so many.
I also got these: And we had eggplant parmesan (yummers) for dinner.

And I have these:There are 12 of them. I don't know what's going to happen to them either.
For the moment all is safely gathered in. Now tomorrow I have to do something about what I gathered. Wish me luck!!!

I have frozen my green peppers and they were fine. They don't work well for stuffed peppers but for adding them into salads and baked beans they where great.

Can some yummy Salsa with the tomatoes, and freeze what you want of the bell peppers, but save some to make a batch of stuffed peppers. They are yummy also. It is finally cooling down here, just to the 90's though. But that is better than 106 that we had last week.

Salsa, or maybe some yummy homemade pasta sauce. I'd prefer pasta sauce over salsa, but so many people love salsa - plus that would incorporate the peppers.
Mmmm, eggplant parmesan is one of my favorites!
